Be on the lookout for the Redbud or "Harbinger of Spring!"

Okay, maybe it's a little bit early, but these warmer days In Athens have us thinking of the Redbud, which gives us one of the first signs that spring is around the corner.

Fun fact: redbud is a member of the legume family and its flowers are edible. Our team can’t agree on exactly how to describe the taste, but arrived at a conclusion that the flavor is somewhere around “peppery sugar-snap pea.” A brief google search yields recipes for redbud jams and jellies, redbud omelets and even redbud cake. If those sound a bit intimidating you might try simply using redbud flowers to dress up a salad.
